Although I am trained in French Cuisine, my love for fish and different cultures lead me to working with a Japanese sushi chef in Toronto. Under him I learned the proper techniques for cooking sushi rice, cutting fish and preparing various kinds of sushi, nigiri and sashimi. You can now learn from Chef Clay how to safely prepare sushi at home. We will cover handling raw fish, cooking and seasoning rice, knife skills and preparing sushi, sashimi and nigiri.
